Want some festive recipes that are a little friendlier for your waistline? Give some of these a go!
Cinnamon Cookie Dip
This one is super easy and can be mixed up and cooked in five minutes and serves one person.
- 30g apple sauce – 100% apple puree is what I use – find it in the baby food aisle!
- 20g oats, blended into a flour
- 2g stevia
- 15g pasteurised egg white or milk of choice
- Pinch of xanthan gum (a binding agent – find me in the gluten free section)
- Pinch of cinnamon or other spice of choice
- 10g chocolate chips or sultanas
- Optional: 10g cinnamon protein powder
Simply mix together and enjoy!
“Christmas Pud” Energy balls
No oven or microwave needed here – mix up some festive fruits, oats and nut butter and you have yourself some festive Christmas Pud energy balls.
This recipe makes one serving.
You can even decorate them!
Ingredients:
- 30g almond butter (peanut, cashew or hazelnut would all be really nice too!),
- 30g oats, blended (to make a flour)
- 5g cocoa powder
- 1/2tsp cinnamon
- 1/4tsp ginger
- 1/4tsp nutmeg
- 15g sultanas
- 30g vanilla whey protein or vegan protein powder
- 100g cooked and mashed sweet potato (skin removed)
Mix all ingredients together and roll into balls! If it’s too dry, you can add a little bit of water, yogurt or low fat cream cheese.
Bresaola Wrapped Asparagus
Ingredients:
- 125g fine asparagus
- Slices of meat such as Bresaola (or Quorn) to wrap round asparagus – I used 90g
- 60g cream cheese (med fat)
- Pinch of mixed herb seasoning
Method:
- Mix the mixed herbs with cream cheese.
- Wash and pat dry the asparagus.
- Lay out each slice of meat flat on tray lined with tin foil.
- Spread a little cream cheese on each widthways.
- Place a 2 pieces of fine asparagus on top and roll up.
- Cook the tray for 5 minutes at Gas Mark 4/180C/350F.
- Remove from the oven and serve. I suggest serving with salad and sweet potato!
You can use other thin meats too.
You may want to boil the asparagus for a couple of minutes if you are not using the fine kind, as it will be harder. You will also want to only use one spring of asparagus per roll up if you are using the thicker variety.
Bresaola can be found in the cold, cured meat counter/aisle next to things such as chorizo and prosciutto.
This could also be air fried, not just cooked in the oven.
